

A Day Dedicated to "Snack Love"
From fried eggs made in the high-speed oven from Atollspeed to classic snack sandwiches and the “Udon Ding” with coleslaw — Stefan Klausmann from Bedford Wurst- & Schinkenmanufaktur and Sascha Wenderoth from the Snackprofis – Concept & Workshops really turned up the heat at our first snack workshop here in Eresing. Thirty-five participants got to watch as the two of them churned out “little treats” (as Wenderoth likes to call his snacks) one after another, “pimped” open-faced sandwiches, and presented the snacks in an appetizing way on the counters at AICHINGER and on the display trays at PricoPlex. The two snack experts skillfully played off each other and had innovative ideas and practical tips for butchers and bakers alike. The snack sandwich, made with Bedford’s specially developed bread paper, provided a particularly eye-opening moment.

Butter pretzels and Leberkäs sandwiches are a thing of the past
The comments made by Wenderoth and Klausmann at the first snack workshop were clear: Customers want new, creative snacks that still look appetizing and fresh even at lunchtime. Three wilted lettuce leaves and a watery tomato as a garnish on a roll don’t exactly spark enthusiasm among customers at the bakery. And the reason people still buy the Leberkäs sandwich at the butcher’s is simply because there’s nothing else available. Yet it’s so easy to quickly create a great snack using just five ingredients—one that looks delicious, doesn’t make the packaging soggy, and is easy to digest. Good bread, a spread, crisp lettuce or cucumber, cheese, ham, salami, or a patty as the main topping, topped with fried onions, coleslaw, grated cheese, herbs, or or or …

The flexitarian at the fresh food counter
Another recurring topic was the vegetarian and vegan customer base. On social media, vegan offerings at the fresh food counter are the subject of heated debate, and the ingredients in vegetarian and vegan products are being scrutinized. Here, too, Wenderoth and Klausmann agree: “Vegetarian and vegan snacks are definitely a trend that can’t be ignored. Today, people are also talking about ‘flexitarians’—those who consciously eat less meat and seek culinary variety.”
Bedford has recognized the signs of the times and launched five vegetarian delicacies. The feedback from participants: really delicious!

You eat with your eyes first
Even the most delicious snack will go unsold if it isn’t presented attractively. Wenderoth and Klausmann therefore repeatedly emphasized the importance of displaying snacks with the cut side or open side facing the customer. With counter steps, snack displays, and salad bowls, you can showcase your products to their best advantage and ensure an inviting presentation at your counter throughout the day. It’s therefore also important for bakers and butchers to work with reliable partners in the areas of store design and counter displays.
Wenderoth and Klausmann repeatedly urged the participating butchers and bakers to draw inspiration from each other’s counters, to think outside the box, and to think ahead. “Bakers and butchers often operate together in combined stores. But the two trades can also support each other beyond that and really gain a foothold in the foodservice sector.”
